200g dark chocolate

½ cup Byron Bay Peanut Butter

1 cup frozen raspberries

1 scoop vegan protein powder

¼ cup desiccated coconut

Dash of water

(Optional) 2 tbsp maple syrup
Method

Line a muffin tin with cases.

Melt half the chocolate (100g) and divide between the moulds. Freeze to set.

Blend raspberries, protein, coconut and a dash of water in a food processor. Sweeten with maple if using. Spoon over the set base.

Add a layer of peanut butter, then return to freezer.

Melt the remaining chocolate and pour over the top. Freeze again.

Once set, pop them out and try not to eat them all at once.
